We enjoy these cookies around the Holidays or just anytime. They use Justamere's pure Maple Syrup and Maple Sugar. I have posted this recipe before and felt they were worthy of another posting.
Cranberry Pecan Shortbread Cookies
Makes 30-40 cookies. Preheat oven 350 degrees. Bake for 18-20 minutes or until lighty browned.
Cut dough in 1/2 in. slices and arrange on baking sheet. Can cut recipe in half.
- 3 sticks of butter(1 1/2 cups unsalted butter softened.)
- 1/3 cup Justamere's Maple Sugar or 1/2 cup white sugar
- 1/4 cup Maple Syrup (no substitution)
- 1 tsp. vanilla extract
- 3 cups w.w. pastry flour
- 1/2 tsp. salt
- 1 cup dried cranberries
- 1 cup pecan pieces, toasted
Mix together butter, sugar, and maple syrup. Add vanilla and stir to combine. Add flour one cup at a time. Stir in salt, cranberries, and pecans. Shape dough into two logs and chill until firm, 1-2 hours.
