Slabs For Sugaring, Pumpkin Pie with Maple

   We picked up some slabwood over the week-end from a local sawmill, for the 2009 Maple Sugaring season. We prefer using wood to boil  down our sap. We always have to prepare ahead of time to get the slabs, because it is very important that they are dry by next spring. The dryer the wood, the hotter the fire, and the faster the sap boils away. We will cover all our piles of slabwood to prevent them from getting rain or snow on them.
   
    I was at the Amherst Farmers Market on Saturday. It was a very busy day with people around enjoying the brilliant colors of the day and fine weather. Many people bought multiple jugs of Maple Syrup to keep over the winter. The Maple Syrup keeps indefinitely once it has been opened in the refridgerator and unopened it will last a long time. So it is time now to stock up for the winter. Check out our website  at www.justameretreefarm.com and order now for later.     I love Pumpkin Pie! I want to share this Maple version of the pie. I grow my own sugar pumpkins specifically for this pie. The Farmers Markets have many, many pumpkins for sale now. And if you do not have time to make pies, you can always turn them into Jack 'O Lanterns.
Maple Pumpkin Pie

• 3 cups pumpkin puree
• 3/4 cup Maple Syrup (Grade B or Grade A dark amber from Justamere)
• 2 tbsp. Molasses
• 1/4 tsp. Powdered cloves
• 3 tsp. Cinnamon
• 1 1/2 tsp. Ginger
• 1 tsp. Salt
• 4 eggs slightly beaten
• 2 cups scalded milk

1. Preheat oven 375 degrees.
2. Mix in order given. Pour into pie shell.
3. Bake 30 minutes or until solid.
4. Variation- omit pie shell and bake filling in buttered baking dish and serve with vanilla ice cream or heavy cream with maple syrup added. Also delicious and so easy!

    J.P. will attend Hawthorne Valley Farm for their fall festival in Ghent, New York this Saturday, October 11th. It is located across from the Hawthorne Valley Waldorf School. It should be an exciting day, with many activities for the family.

    I have an easy and quick recipe for you, using pure maple syrup. Here goes......

Maple-Glazed Sesame Sweet Potatoes                

• 2 Tbs.butter

• 2 Tbs.sesame seeds(optional)                    
• 2 Tbs. Maple Syrup
• salt and pepper
• 3 large sweet potatoes                           

      Directions - Put sweet potatoes in a skillet with 1/4 inch of water on the bottom. Cover and steam until cubes are almost tender. Drain any remaining water and return to heat. Add butter and maple syrup and stir frequently, allowing the sweet potatoes to start to brown on all sides. Add the sesame seeds, salt, and pepper to taste and cook until browned.
